Thai Pork in Coconut Milk with Curry Paste...(Mild)

Thai Pork

Annette has been cooking up a Thai storm again and thoroughly went over the details of how to cook chicken or any other meat or seafood in Coconut milk..With the addition of currry paste from mild to super hot. This dish can be enjoyed with any type of rice or noodles and any veggies of your choice.
You'll need a can of Coconut milk ( I used a brand called Thai) found in the Asian section of the supermarket...and some curry paste. Mine was mild and made by Patoks...They make many variations of pastes and curry paste comes in many strengths...I chose one that said Mild...tho there is red and green...seems to me the red is hotter...better read the labels...
Then you will need chicken pieces or pork..or seafood... and an assortment of veggies clean and in pieces
If you have time, marinate your chicken or pork in crushed garlic and some soya sauce and lemon juice...all in a zip lock baggie. If your pork is in large pieces, par boil for 20-30 minutes first.
So you want to add oil to your wok and brown up your pieces of marinated chicken or pre-boiled pork along with some crushed garlic and an onion cut into eigths.. . Just cook till the juices run clear when the piece of chicken is pierced with a fork.
At this point, I removed the chicken ( or Pork) and threw in the rest of my veggie pieces ( red pepper, green pepper aspargus, mushrooms,zuccini..) ...and gave them a quick stir fry, then removed them and added the chicken back into the wok and poured the can of coconut milk over top...continue to cook on a medium heat and stir in about a tablespoon of mild curry paste and adjust the amount of paste to your pallet...more for hotter.
At this time cook your rice or noodles to have alongside or underneath. I also nuked up a big batch of spinach and beet greens and chard..
The paste and the coconut milk mix to be a rich brown gravy over your meat...you can even add a third of a cup of water if it gets too thick,then add a tablespoon of brown sugar and salt to your taste...
This will give your head a flavour buzz, it will be soooooooooo yummy!
If the chicken or pork look pretty much cooked, throw in the veggies to heat them up without them losing their bright colour.
When your noodles or rice is done, use that for the bed, top with the Chicken and Veggies in coconut milk, and adorn with more veggies ( The green in the photo is the spinach I nuked) and you may also see a few radishes from my garden...(not nuked)..
Serve while hot and enjoy...

Happy Birthday to Arlene
I almost forgot to mention that it was my sister Arlene's birthday Yesterday...Happy Birthday Sister! We had a nice chat on the phone and with any luck she will get out to have a visit with the grandkids when they are visiting.
I scurried aound this morning to get things organized so that I could run into town and vote in the advance pole as we will be en-route next Monday, election day...and possibly won't return before the poles close.
As usual, the short trip turned into a long trip. I received my Yves Rocher package with Lori's vanilla almond body wash that she wanted, so I swung into Pheobe's, in case Lori happened to still be there.. She had already left, but Phoebe and I had a blab. She is all excited that Ronda is coming up in a few days...and was cleaning up, after a house full this past week-end. Her hubby,Ron was selling smaller sized wood picnic tables and he had a wood trellis there, both at $100.00...not quite as fancy as his $200.00 models, but still looking great.
Town was already an oven by 1:00.
I voted after hunting down the church hall...not at all very well marked...someone two feet tall might have been responsible for hanging the signs,as not one was visible from the driver's seat of the truck..
I dumped at the dump...five bucks worth and netted a dog biscuit for Silky...Sheila there, is so sweet...always gives a dog treat whether Silk is there or not..
I stopped off to offer support to Elaine, one of the CUPE city workers locked out...I hadn't chatted with her since last fall...sweet gal who lost her hubby a few years back, but seems to look better than ever these days and was hoping the lock-out ended soon. Tonight there is a big march and BBQ for CUPE in town.
I finally made it to Walmart and doodled around there for a what seemed like a hundred dollars but was actually a little more with the Peat Moss and extra 20 in cash.
damn...just remembered I bought a bale of Peat moss...It is still in the back of the truck..maybe the removal of it will be a tomorrow job...my feet are aching... and a nap is beginning to look good. I rounded off my day with a stop at the new EDO Japan for some Udon soup, and then off to Safeway for some of that excellent flax seed sliced french bread.
Jeni had it at the shower and it was delicious...All the bread made at Safeway is splendid so I stocked up for when the kidlets come...Ran into Ann and we reminiced about the beautiful day yesterday...mmm mmm mmm...

Windsor Knot Inauguration
What a grand day to be introduced to sailing..We are so lucky to have such great neighbours as Ann and Dick, who so kindly asked us to join them for a few hours this afternoon out on the lake in their new sailboat,the Windsor Knot..( get it?)...The hour before we were to leave, the clouds started to blow in and it looked like we might get rain, but by the time we got to the sailboat, the sun started to peek out and it turned absolutely gorgeous with a light breeze...enough to get us spiffing along.
There is nothing quite like the experience of gliding silently thru the navy blue waters of Kootenay Lake without the roar of a smokey old motor pushing you along.
Then all of a sudden someone would yell..."DO you need a drink?" It was a good day...Ann steered us past the ferry and on towards Kokanee Bay where by then, Emil took over the hold on the rudder and learned a little about keeping the sails full of wind...
Not hard for a guy who is full of it anyhow LOL!!
We were glad to have Dick to set things straight when we started listing over to one side or gliding at many knots per hour across the lake...the boat did turn on a dime tho when we tacked...all quite amazing to me, and I never lost my head on the boom, once!
I think we have made it through Sailing 101 and we will be ready for the big day come the end of July!
Ann had us down for a lovely dinner of roasted pork and yorkshire puddings...damn she can make those so good...2 eggs for 12 she says... We sat out on their deck for dinner and desert and everyone petered out by 9:00... a lovely day had to end before we all curled up and dozed off...speaking of which!..Thanks Dick and Ann...
