No Time to Blog, No Time to Blog...Beer Chicken on the Run 

Oh my, the time is a fleeting around here and my blogging moments are slipping away...I can see where this blogging business will lead to more of a winter project rather than a summer one.
First of all I'll give you a crash course on making "Beer Chicken". All you need is a can of beer, a thawed chicken, Pammed broiler pan without the rack, or a round cake pan that has been sprayed with Pam, Lemon juice, Oyster Sauce , and Soya sauce.

First things first...Pop the can of beer and drink half of it, reserving the remaining beer in the can for the chicken's third leg, so to speak. You will clean up your chicken and stand it with its drum sticks pointing down and gently slide it over the can of remaining beer so that the beer can is now inside the cavity of the chicken. Your chicken will now do its tailstand all by itself.( Neck will be sticking straight up-( can remove it if it is too tall). Place the whole contraption in your pammed broiler or cake pan so the chicken continues to stand and now you will give your chicken a little full body massage, starting with a generous amount of soya sauce, followed by the lemon juice, and then lastly the oyster sauce. Don't worry about your hands becoming gooey, as this mixture is better than Jergan's Lotion for your hands!

Remove the top racks or two in your oven or your BBQ and leave one rack at the second to lowest position in your oven, or just balance the pan on the briquettes to be able to close the BBQ lid. You'll want your oven heat to be 350* or your BBQ at 600* or there abouts. Now, before you close everything up, add a glass of water to your pan and continue to keep some water in the pan or you'll have a burnt mess to scrape out ( add water about every half hour)!
Roast for at least an hour and a half for a six pound chicken.
Here are a few shots of what it will look like...Very crispy and dark on the outside and moist as ever inside. You may require help to remove it off the beer can when it is hot, but then you can quarter it up or slice it and serve it with rice or whatever. The juices are tasty poured over rice if you haven't burnt the crap out of them...Enjoy Beer chicken...and you are permitted to drink more than half a beer in this process, but remember, the chicken needs a half can of it at the very least!!!

Sorry I don't have any of it sliced...we were just way too starved to stop and take photos...We had Chimo Perogies, and Joyce brought the makings for a nice Greek Salad and Lynn broughtthe huckleberry tarts for desert. I Made Rhubarb Betty, but as I said before , it boiled over. The rhubarb looked great and once I recooked it, the Betty was delicious with a scoop of that "Oh So Good" !..Yum...I had a piece for breakfast!

Time to pick your Rhubarb...I had enough left over to add sugar to and pop into the freezer for winter muffins...

Just looked at my blog and noticed.... 

...looks like a few of the photos I uploaded with Hello just have a box with a small icon in the corner. When I clicked on the icon it opened the picture up as a huge photo. Please bear with me as I work out the "Hello" bugs as uploading it by "Hello" is a more simple process, and seems to work for the most part...I'll continue to try to find out a little more. In the meantime, Joyce and Lynn both came out today before Sonia returned home from work and we all had a nice supper of "Beer" Chicken as I call it! I promised Ronda that I would give her a recipe for it, so took a few pics and will try to put both them and the recipe on my blog tomorrow. Meanwhile we had a good time in the hot-tub and had a few too many cups of tea with various deserts that were kicking around here...Lynn brought out some wedding Huckleberry tarts that were yummy, and some Pizzelles..(Italian cookies she bakes in a Pizzelle Iron) and I had left over birthday cake and a slightly raw strawberry rhubarb crumble. It was boiling over in my oven and appeared cooked, but unfortunately was still a little chunky... We ate it anyway and all felt like little rolly-pollies.
Okay time to hit the hay...G'night

Happy Wedding Everyone 

The Wedding was terrific and I think we have all almost recouped...and now I have photos, photos,photos, and went ahead ane uploaded a few to my blog using Hello...after I said how great and simple it was and now there seems to be no pictures and hardly even my blog available...Sorry about that. I have worked on it for an hour and now I must go to the hot-tub with Sonia who requested we hot-tub...She is playing a game of Scrabble with E. and should be done any second now. I'll leave the picture stuff on the blog here in hopes they arrive by tomorrow morning. My pics that were there of hte shower and Erin's baby are also gone...so boo-hoo and I'll try tomorrow to fix the problem. Meanwhile I hope everyone got home safe and sound and if Dick and Nadine are home, don't worry, we'll have tons O Photos...I am saving the best for you both...I am still downloading them from my digital and so far we have a few real bonuis shots that make the memories great. Thanks for a beautiful wedding, and thanks Lynn and Bob for all of your hard work...It certainly showed, in all the details...Time to tub now...blog repair coming tomorrow...
