Here is Mary Jo Fetterly's web site if any of you haven't already discovered it. She is the Yoga instructor from Proctor who was severly injured while skiing a few months ago and is still in VGH with paralysis from the chest down. Read about her determination and make a donation if you wish. She supported her two daughters through her skills as a yoga instuctor and personal mentor and now that has been taken away from her.The auction fundraiser was a great success but it looks like she will be in the hospital for the long haul.

 

Sharon Osbourne Show 

Don't know if you ever tune into the Sharon Osbourne show, but Thursday ( tonight's) show was focused on Colon Cancer saying that it was the second leading cause of death in men and women...150 people a day die of it...in the world? So apparently, Sharon had colon cancer and caught it early enough for it to be removed and dealt with. Not so lucky was(fellow from Backstreet Boys) Kevin's father who died at age 49. In fact when I thought about it , I know of three people who died in the past few years, and two were younger than older. Sadly, our friend, Carol passed away a couple of years ago from it and she was only 48 years old ( and didn't deserve to die) and an older neighbour of ours passed away last year from the same disease, and my cousin's brother-in-law,in his fifties, died from the same thing, I believe.
I don't want to be a fear monger, but it seems that if it is treatable at an early stage, then anyone with a family history of it should be screened after age 32 or so, and if you have any inkling of problems, get yourself screened.
Now that I have said that, I think I will be talking to my doctor! I had no idea it was such a huge cause of death. Not that I have a family history of it, I don't think ( half my family was goners long ago for one reason or other, but I don't think any of it was due to colon cancer). Anyhow, I think a good point was made and I wanted to pass that along, since I am always talking about food...this just relates to the other end of the chain!...and no-one wants that plugged off!
I am off to K'lwna tomorrow with J to do a little shopping and visit A and S. Should be nice if it isn't snowing over the Paulson Pass. So time for bed...eat well, live right, and have a good week-end...I'll be back...maybe Sunday or sooner...G'night...remind me to tell you about the cheery wreath I made today for my front door...I'll take a picture of it if the deer don't eat before I return!

Avacado Salad 


Here's what I had for my dinner tonight, a fresh Avacado salad made with the leaves of one of those "living" butter lettuce heads. We grew fond of eating that lettuce when we spent time in Costa Rica. It was cheap, and fresh and much sweeter than the bought variety that we get here. Typical of a salad at Ana Lucia's house, it started with a washed head of butter lettuce. No need to shred the leaves into bits as they are nice in one or two pieces to retain their cup shape. Ana usually added a fresh ripe peeled tomatoe diced, green onions chopped, celery,cucumber, green pepper and chopped cilantro and last but not least an entire avacado chopped into wedges.The whole salad was dressed with a vinagrette of fresh garlic cloves chopped, olive oil, vinegar, salt, pepper and a half teaspoon of sugar all shaken or stirred together with a dash of hotsauce in it. Tonight I omitted the green pepper and cucumber and instead added some shredded red cabbage,and topped it with a sliced hard boiled egg, then poured on a little commercial creamy dressing. I guess I was a little disappointed, because the dressing drowned out the fresh cilantro...so next time I will stick to the vinagrette! Other than that, it was delicious with the thin slices of baguet and a burrito on the side.



I had this baby frozen from a month ago when I made a pan full, then wrapped them individually in tinfoil and popped them in the freezer to be eaten at a time like this, when E. is on the road. Poor guy must be pretty busy and he is without a cell phone so I haven't heard from him since he left. He will be back tomorrow so we will connect for dinner...what to make...what to make...
Oh yes, I was going to mention that Stokes seeds sells a lovely version of butter lettuce called Esmerelda. I plant it every year and enjoy it as fresh as if I were back in Costa Rica!

Just listening to the World Music channel and it always makes me feel like I am in a tropical location as they often play Cuban or Jamaican or African music... When you go to their site you will see that you can listen to a radio show they have designed for internet listening. Tick off the download speed ( I am on dialup and checked 20kb) and your media player will open up and begin playing some Etheopian music. If you minimize that page and open another instance of your browser ( Internet Explorer), you can surf the web and still listen to the music... on your minimized page. If there is a more simple way to do it,then let me know at Chat Back at Me!

Brenda's Fruit Streudal 

Brenda’s Streudal Cake

1 cup margarine
1 ½ cups white sugar
1 tsp. Vanilla
1 tsp. Almond flavouring
4 eggs - beat into above, one at a time
3 cups of flour …beat in a cup at a time and mix well. It will be quite a stiff batter.

Spread 2/3 of batter on 10x15 greased or pammed jelly roll pan or cookie sheet that has sides.
Spread prepared filling*over top, and sprinkle with cinnamon,sugar and flour mixture.
Spread remaining batter on top of fruit, as best you can with as much cursing as necessary. A fork may be used to sort of press the fruit into the batter. Don’t worry if all the fruit isn’t covered with batter, as the batter rises up around the fruit when it bakes.
Bake at 350* till cooked . The top will be starting to brown at the corners.
Drizzle icing** over cake while it is still warm.
Cut into two inch squares. It may be frozen .

*Fillings:
1. 5-6 apples ,3/4 cup saugar,1/4 cup flour and cinnamon. ( mix together)
2. any prepared pie filling, such as cherry or blueberry
3. 5 cups of saskatoons or blueberries, 3/4 c. sugar,1/4 cup of flour,cinnamon
4. 5 cups rhubarb chopped small, 3/4 c. sugar,1/4 cup of flour,cinnamon
5. use any fruit you want ,mixed as above and you may use baker's starch to thicken it instead of flour, if you have access to it. Remember to mix it with sugar before adding it to the fruit so it doesn't lump up. Locally you can by the Baker's starch at the EverGreen Market up the Slocan Valley.


**Icing
1 cup icing sugar
1 tsp. Margarine
1 ½ - 2 tsp. Milk or water
1 tsp almond extract.
Heat in microwave and drizzle over warm cake.
Can be frozen..







 

Still on Yesterday 

From my bathroom window,yesterday am, I could count THREE, not ONE, but THREE COYOTES having a little romp down by our Willow tree! WHere did two more of these shepherd sized beasts come from? We started with one that travelled around and through our yard, and often can hear a whole pack of them yipping and ka-yowling up the mountain somewhere, but to have them wandering through the yard at 6:00 in the morning makes me nervous...especially since I own a tasty tidbit of a bichon frise that likes to go out on her own for a morning pee. Not anymore ,which in turn, means that I can get that fresh-air experience with the dog, as I did two times in the middle of the night, last night.
J and I accomplished a fair amount once we got down to business and actually started to hang this lovely new off white, very reflective textured swirly paper that seemed to hide many of the lumps and bumps on the ancient walls beneath.It will be a good change from the delft blue wallpaper that her and I hung in the kitchen some 25 years ago! We never finished the entire kitchen, but at least did the main parts, which used up a full two rolls. She will have ample paper left with her remaining roll to do the small areas above the kitchen cabinets and around the kitchen window. Now she is onto ordering curtains and soon it will have a brand new facelift from the floor on up. I say "Good for J!"
I talked to my daughter A last night and all seems well with her and S. The two cats, Poon and Soleil are getting along much better ....bad enough trying to get two humans to co-habit, never mind two cats! Soleil, being a Manx ( no tail) is facinated with Poon's ever wagging long switch and is compelled to bat at it like live play toy. A said that Poon gets back by biting Soleil on the bum. Neither have any claws, so it is pointless to get into a cat fight.
J and I will take a run over to K'lwna on Friday to do a little shopping for J. and we'll catch dinner with An. and S's mom, Bev at the Thai restaurant that the kids love....my mouth is watering already!
I was a busy baker on the week-end, half expecting a load of people to show up on Sunday since it was so beautiful out. Besides making the turkey soup, I thawed out a bag of frozen apple pie filling from J's beautiful apples and I made a batch of Brenda's Apple Streudal, and used the remaining apples to mix in with the strawberries I had in a dish, and I turned that into Apple Betty. Since Neither L&L came over on Sunday and my favourite aunt and uncle from C'stlg'r didn't venture out our way for a drive, I had oodles of streudal left over. I sent a plate full with E. to work, took a plate full to J's and am left with enough for tea for the rest of the week!
You can use most any kind of fruit in the Streudal and it doesn't take long to make, all in all, so it is a great way to use up fruit and have a nice desert square. Recipe for the streudal is on its way!

More New Lambs 

J's black sheep had twins last night and the little girl wasn't able to stand up by herself to nurse. M. played mama all night and fed milk via a bottle and this morning the little gal was stronger and standing, but didn't seem to know where to go for milk, except to M. and his bottle! Poor little misguided creature. M&Jwere going to stay out of there for a few hours to see if the baby would pick up the que from its twin and learn to get milk the normal way. I will take my camera tomorrow and try to get a better photo ! G'night again!

PS. I noticed that all my links and archives have fallen to the bottom of my site. I beleivve this is due to the ultra large pics I have put in there lately. I'll try to reduce the size to see if that is a cure. Meanwhile scroll to the bottom to see the whole nine yards.

 

Sunny Sunday 

The snow is going fast and we are soaking up the rays of spring around here. I spent a good chunk of the day outdoors again...pruning and more pruning and more pruning...and that was just in my garden! The apple tree that had two apples last year got a serious trim to the point of being nearly a no-tree! Also the two Balsalm Pines got a good haircut..because they were through the fence once again. I then took great lengths to delimb two of the three white barked trees ( weeping aspen?) at the top of my garden. Wow...Certainly makes a difference to their shape. Also I will have more light up at the top side of the garden and as well, there will be more peek-holes through the foliage once they leaf out. E. came down at the end and helped take out a few more of the craggy twisted and thin limbs, higher up. My poor garden hasn't had anything seriously cut back in several years and it is surprising to see how the evergreens have matured. If I could get them planted around the full perimeter, I wouldn't need a fence!
Speaking of fence...I should have my bird feeder out front, inside of one. The deer multiplied and tonight we had FIVE come for a visit. Each were brave enough to stick their noses right into the birdfeeder and inhale the seed. I placed Silk on her tether to be the bird -feeder gauardian and alll was well until she chose to come back into the house. The deer returned over and over and could care less if I shooed and hooed at them. I am sure that by morning, the feeder will be empty!
I thought for sure my Aunt and Uncle would show up on this very Sunny Sunday, so I prepared a pot of turkey soup from left-over Christmas turkey bones that I unearthed in the freezer. Very yummy. I pressure cook the bones in water first of all for ten minutes or so and then cool the cooker down and strain out the juices. I pick any meat off the bones and return the meat pieces and the stock to a cleaned pressure cooker. ( you don't want any of those tiny bones that stick to the side of the pot so I always wash the pot out). Next I added chopped potatoes and I fry up an onion and some celery in butter to add after the potatoes are cooked. Today, I added a few potatoe flakes from instant spuds to thicken it a bit, then I careful warmed some cream and added it to the soup to make a nice creamy soup. ( don't boil it once the cream has been added)
I have varied it in many ways over the years and mostly add what I feel like on that particular day...rice, noodles, carrots, perogies,giozas, mushroom soup; or even a dash of soya sauce and some chopped green onions and frozen peas for an oriental touch ( no cream) (thicken with a bit of tapioca starch instead, and stir in a beaten egg for egg drop soup). I use chicken bones or turkey bones - whatever I have.
Good luck on your soup..I am sure everyone makes a great tasting leftover chick/turkey soup, themselves, but thought I'd share this easy no fuss way to make it for those who haven't tried to make soup yet. If you don't have a pressure cooker, you can simmer the bones for an hour or so till it smells good and the meat drops off the bones more or less).
I ve re-downloaded that Ultimate Paint Program because the first version I downloaded was missing a file. This one opened up and ...My oh My! Looks like a mini Photoshop program! I played around in frustration for a bit, but realize that even the novice version requires knowledge of the program before you can do anything too complicated. I'll keep working on it until the free part of it runs out!It looks to have great potential...many many more features than the Paint program that comes with your computer.
Oh yes, I noticed something the other day when I was downloading...all of a sudden I realized I was downloading a different file than the one I selected...like totally different. I stopped the download and then tried again and all was ok. Apparently that can be a loophole in Internet Explorer that allows a hacker to infect your computer.
The safest thing is to make sure all of your patches and updates are in order for your version of Internet Explorer...while Microsaoft is still offering support to Windows 98, 2000, and Millenium Edition. That support will disappear in 2006...because by then your 'puter will be ancient history! G'night all!
Its off to J's tomorrow to help her hang wallpaper in the kitchen...Yippee!
